«Salmon is different. As a source of inspiration, we chose not the traditional Atlantic salmon, whose Latin name is Salmo salar, but its very rare relative, Oncorhynchus kisutch. This fish is grown in open reservoirs, daily fish farmers rub oils flavored with herbs collected on the slopes of the Himalayas into the skin of the fish. This species feeds exclusively on crustaceans, pre-digested pink flamingos. Each fish is smoked according to a secret recipe made with Scotch whisky.
